Why do they christen a boat with a bottle of champagne?

In the Middle Ages, Vikings traditionally christened their ships with human sacrifices, letting the victim's blood spill over the bow of the ship. This eventually evolved into the less violent practice of christening a ship with red wine. Red wine eventually gave way to champagne, which is traditionally used today.
