What makes coffee dissolve quickly in hot water?

Literally speaking everything can be dissolved in hot water except from the steel...e.g the Hotness or degree of hotness of water over coffee triggers the dissolution..THE DEGREE OF HOTNESS OF WATER HAS SOMETHING TO DO WITH THE DISSOLUTION OF EVERYTHING.
