Spring water, like any liquid can be distilled, but it is not distilled straight out of the ground.

Distillation involves boiling a liquid in an aparatus and re-condensing it into a second container, leaving the impurities behind. This also leaves many desireable things, such as minerals, behind and you end up with relatively pure, bland, tasteless water.

Spring water is often considered "pure" because it comes from an underground environment where most bacteria would not survive, plus it often gets filtered through layers of sand and rock which can remove impurities. However, spring water is easily cantaminated by farm runoffs, sulphur and other undesireable elements.
