For a busy family, with parents coming home tired from work and kids rushing off to evening activities, a family dinner may seem to have become a lifestyle casualty. It doesn’t have to be that way with this easy recipe for one pot chicken and noodles. Not only is this an easy meal to cook, taking less than half an hour to put together, it can be kept warm on the stove top for a long time, ensuring it’s ready to eat during the few minutes everyone’s home together.

Step 1: Pour one 15 oz can of chicken broth into a pot and stir in 12 oz of wide egg noodles. Bring the mixture to a boil.

Step 2: Meanwhile, cut as many baby carrots as desired into halves or quarters. You can vary the amount and size to suit your family’s taste. Stir the carrots into the broth and noodles.

Step 3: After five to ten minutes, or once the noodles and carrots have started to soften, add a can of mushrooms to the mixture. You can add the liquid from the mushrooms, as well. Lower the heat under the mixture to medium.

Step 4: Stir one can of cream of chicken soup into the mixture. Stir it gently but thoroughly into the chicken broth. This both thickens the mixture and adds flavor.

Step 5: Add two cups of cut-up cooked chicken. You can use white or dark meat--dark meat is usually more flavorful, but white meat is healthier. You can use leftover poultry from an earlier meal, but if you don’t have leftovers on hand, you can use two cans of canned chicken. Alternately, you could cook and cut up two chicken breasts.

Step 6: Add about one teaspoon of salt and a half teaspoon of pepper. You can adjust these amounts to your family’s taste. Also add a pinch, or about one-eighth teaspoon, of nutmeg. This sounds bizarre but adds a wonderful flavor to the dish.

Step 7: Cook the mixture over medium heat five to ten minutes more. You can either serve it immediately or turn the heat down to low and let it simmer until everyone is ready to eat.
