To make horchata, start by soaking 1 cup of uncooked white rice and 1/2 cup of blanched almonds in water for about 4 hours or overnight. Drain and blend the rice and almonds with 4 cups of water until smooth. Strain the mixture through a fine mesh sieve or cheesecloth into a pitcher, then sweeten with 1/2 cup of sugar, and add a teaspoon of cinnamon and a splash of vanilla extract.
