When in gear 1 on a motorcycle do you shift up 2 gears to get to the 2nd gear?

You're not shifting up 'two' gears into second, you're shifting up 'one full click'

Neutral is a half click above 1st, and second is a full click. So when driving and you're in first, one full click (shift) will put you in second - not two.
