Why is hunting referred to as harvesting?

It is normal to use the verb that someone is doing as a noun for them. For example, people who run are called runners, people who play football are called football players, etc. So it makes sense that people who hunt are called hunters. However, care must be taken, because people who fish are not caller fishers.
