In the early 1800's many fresh products were mainly consumed in the areas where they were produced. This included fruit, vegetables and various types of seafood.
With the advent and expansion of the steam engine and railroads perishable goods were able to be shipped further afield (from the production areas), without too much spoilage.
The distance was vastly increased, however, when railroad box cars were refrigerated (i.e. the advent of cooling and ice shipping).
