There are two was to answer this question. There is the Practical way and the Prescribed way.
The practical way is to verify the largest item or number of people that you want or need to get through the door. You also should know how easily or quickly you need that to happen. Then, you design around those requirements.
Then there is the prescribed way. The International Building Code requires that you have a minimum of 32" "clear width" at all exit doors. There is no minimum at all other doors. There are other exceptions and also additional widths based on occupancy (use of space) and occupant load (number of occupants).

Building code requires a 36" door for means of egress not 32" for residential construction. Handicap doors are required to have a 32" clear opening.
