Sundrying tends to evaporate the excess water without altering the chemical composition of the food. With the absence of water, the growth of bacteria and fungus is stunted. However the food retains the original nutritional value and taste.
This however again may be limited to select food items. Ex:Meat can be preserved by roasting on coals or an open fire.
