What is the difference between a GMC SUV and a crossover?

No matter what the brand of vehicle, an SUV is a full-sized sports utility vehicle, often based on a truck chassis. A cross-over is a smaller vehicle, as if they bred an SUV and a car/sedan together and the off-spring was the cross-over. A cross-over tends to not be as tall as an SUV.
