Suji extract is made from an Indonesian leaf (suji plant - Botannical Name: Pleomele Angustiforlia syn. Dracaenae angustifolia). The leaf is usually used together with pandan leaves (aka screw leaf pine) to give a particular green color and does not add flavour to the dish. Suji extract can be substituted with green food color with no adverse effects.
Suji extract is used in a lot of south east Asian cookings - particularly Indonesian cooking.
