When water is heated sufficiently it vaporizes. When large quantities of water encounter lava (e.g. underground or any confined space) it causes an explosion just like traditional explosives. The pressure builds up and is released through the weakest point causing an eruption of some sorts. AKA hydrothermal explosion (google it)
