Ingredients:
1 pre-made pie crust
1 can of black beans, drained and rinsed
1 small onion, chopped
1 bell pepper, chopped
2 cloves of garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
1 cup shredded cheese (such as cheddar or Monterey Jack)
1/2 cup sour cream
2 eggs
Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, sauté the chopped onion, bell pepper, and garlic until they are softened.
Add the drained and rinsed black beans to the skillet, along with the cumin, chili powder, salt, and pepper. Stir well to combine and cook for another 5 minutes.
In a separate bowl, whisk together the sour cream and eggs until well combined.
Stir the black bean mixture into the sour cream and eggs.
Place the pre-made pie crust into a pie dish, pressing it down to form the crust.
Pour the black bean mixture into the pie crust.
Sprinkle the shredded cheese over the top of the pie.
Bake the pie in the preheated oven for 30-35 minutes, or until the filling is set and the crust is golden brown.
Allow the pie to cool slightly before slicing and serving.
