A 4-6 pound duck can be defrosted in two ways: in the refrigerator, which will take 1-2 days; or submerged in cold water. Make sure the packaging is waterproof, or put the duck in a bag, and submerge in cold water. Change the water every 30 minutes. This will take about 2-3 hours.
Duck can be defrosted in the microwave, but this is not recommended, as the meat may become tough.
Once it has been defrosted, the duck can be refrigerated for up to 2 days. It can be refrozen if it is not used in that time.
