Why do fats and oils contain more chemical energy per gram than carbohydrates or protein?

Although lipids are composed of carbon (C), hydrogen (H) and oxygen (O), they contain relatively little water. The lack of water in the molecule means they carry much more energy per molecule than any other kind of compound found in either plants or animals.
