They are more safe than cars because of lap restraints and multiple wheels to allow the cart to go upside down.
But "freak accidents" do happen.
Very rarely though.
They are safe if you ride safely. I heard of these two teenage boys that dared each other to unbuckle and switch seats with each other at the part where you first go up and up at the top where it stops. But... they both fell. So there's your lesson on roller coaster safety! :)
