How do stakes through their hearts kill vampires?

Actually a stake through the heart isn't necessarily certain death to a vampire. The stake was (originally and probably still is) just a way to pin the vampire in his grave so he couldn't keep coming out. Certain vampires have managed to remain active even when they have been thoroughly dismembered. The only certain means is to burn the body entirely.
