Well, it probably won't RHYME, but the "first star to come out at night" may well be a planet; either Venus or Jupiter, depending on the time of year.

In the winter, the brightest stars in the Eastern sky, where it gets dark before the setting sun has completely faded, are Rigel and Betelgeuse in the constellation Orion, or Sirius, which rises about an hour later.

During the summer, the "first star" may be Vega, especially if it is very high in the sky; almost right overhead.
