Depends on a couple factors:
- How the meat is being served: Is it a big stew? Is it steak? I'm assuming its all sit-down meals.
- Who are the people, How much will they eat: Are they a football team or a nursing conference?
For most meats, figure big men would eat between 10-16 ounces, small women would eat 6-10 ounces. On average, 10oz pp, coming out to 400oz for 40 people or 25 pounds. This is figuring liberally.
More advice: Cook less, season more.
