Humans are born with an acquired taste for foods eaten by the mother, because an unborn baby can taste them in the amniotic fluid.

Other reasons are cultural, what we are accustomed to eating, or genetic, variations in the way our olfactory systems and our brains percieve taste.

The olfactoy system is highly complex, responding to thousands of chemicals. Its workings are only partly understood.

As a footnote, I remember, as a five year old, tasting pineApple juice for the first time, on a Qantas jet,and the explosion of flavour was unforgettable, and I love the stuff to this day,and I get flashbacks to that moment. So, taste and smell are closlely linked to memory.

Likes for certain foods can be acquired over time. As a child I hated celery, blue cheese, avocadoes, and oysters. I now love them all.
