The almond itself is healthy in moderation. Nuts are fats... so, you want to eat a good portion size. If you carmalize an almond, you are really canceling out the health benefits. The sugar that you use isn't healthy. If you don't plan on eating a pound of those nuts... they wont hurt you as long as you balance your diet out and excercise, you should be able to eat just about anything you want.
