The holiday seems to always be referred to as "Valentine's Day." However, since the Middle Ages, February 14th has been called "the feast day of St. Valentine." So, the correct form would depend upon whether you are referring to the Catholic feast day or the secular holiday, which although the occur on the same day, have come to be different celebrations.
