Green tea is made from the leaves, buds, and rarely, stems of the tea plant, Camellia sinensis. This is the same plant used to produce black tea, white tea, oolong, and Pu-erh. The difference between the different types of tea is in their production method.

Green tea has many different ways of being produced, but they all share in common that shortly after the leaves are harvested, they are somehow heated. This process is a lot like the process of blanching vegetables to preserve their nutritional content.

Some green teas (most Japanese green teas) are steamed, and others (like most Chinese teas) are pan-fired.
