What is the range of skin color for the earliest Jews?

Different shades of Mediterranean pigmentation, from fair-skinned to olive-skinned. It's the same as their ancestors before them; that is, Adam and Eve, Abraham, Isaac, Jacob, and all of his (Jacob's) sons after him.
