Can granite be cut after it's installed?

Yes, it can be cut after installation. You can add holes for your faucet or soap dispenser. If the edge needs trimming or you need to adjust the detail on the edge it's possible. It's more difficult but it is possible. Remember though you can only remove, you can't add.
