What do the gold bars in Candy Crush do?

Open the Candy Crush app in Facebook. In the top left, you'll see the Gold Bar field with a "+" sign. Click that sign and click on the number of bars you want to "purchase." If you have Facebook credits, your credits will automatically turn to gold bars and you will not be charged.
