There are lots of things. You could have a plot twist like 'billy bob was a traitor the whole time!' Or you can have surprises at every corner. 'Just when billy bob thought he was safe, there it was! The killer zombie!' or somthing like that. Try not to let things get too dull. Have lots of action and plot twists. And, I hate to say, but what really hooks a reader is killing off a character. They never expected it, and suddenly they can't stop reading, wondering if any other characters will die. Once they know you've killed one, they know you can kill another. But to REALLY grab their attention is to do this- kill the main character and switch the perspective. This wil make them ADDICTED to reading your book, knowing that anything could happen the characters they know and love. Hope this helps!
