Cabbage is ready to harvest when the heads are firm and dense, feeling heavy for their size. The outer leaves should be vibrant and healthy, without significant wilting or yellowing. You can also check the size; most varieties are ready when they reach about 6 to 8 inches in diameter. If the heads are splitting or the outer leaves are beginning to dry out, it’s time to harvest.
