Yes you can trim off unwanted branches & limbs to create a Bonsai affect. See google search for juniper bonsai & let that be your guide. HOWEVER, DO NOT TRIM TOP OF BRANCES, these must be finger pruned. You pinch off just alittle of each top branch. This will force growth down INTO THE TREE and thus make the tree much fuller.
