What do cherry blossoms simbolize?

==new answer== Anything which grows from the earth is considered growth in subconscious mind or learning. Blossoms and fruit are especially representative of growth.

As a side note, I had the pleasure of being present at a cherry blossom festival as a teen in Japan, where the whole community united for a picnic and celebration. It sticks in my memory.
