Most of the time, a business will charge a card within ten days of it being authorized. However, it is possible to reauthorize the card later and then charge it. I'm not sure what would happen with a restaurant, but an example of when this usually happens is if you order a product over the telephone or online or etc, and it is not in stock at the time you order, the company will immediately place an authorization on your card when you order. If the item isn't going to be in stock for another two or three months, the authorization generally falls off within ten days or so, but then the card is reauthorized and charged when the item actually ships.
