There was a martyr named Saint Eve of Dreux but virtually nothing is known about her. Eve is also the name of the Old Testament matriarch who is considered as the mother of the human race and wife of Adam. However, the title saint is usually reserved for saints from the time of Christ to the present as well as for angels and archangels.
