I don't want to go into too much detail, although I have added a little of the chemistry in just to give a little of the background as to what I am talking about. There are, for these purposes, two main types of fat.
Saturated fats are those which contain no carbon-carbon double bonds, and therefore they are called 'saturated fats' because they have no more space left - they could not fit any more hydrogen molecules on.
Unsaturated fats caontin either one double bond (mono-) or several (poly-).
Saturated fats are worse for your health, as they can heighten the bad type of cholesterol and are also more difficult to break down than polyunsaturated fats.
There are also 'trans fats', which are manufactured fats. Because they are artificial, they are even worse for your boy because they body does not contain the enzymes necessary to break these down, and so try to avoid these. They are prevailent in cheap margarines due to their properties.
I see you have put this question under 'diet and weight loss', and so I am taking a guess that you are looking to reduce the fat content in your diet. This is not unhealthy, in fact it may contain many health benefits depending on your person, but just remember that fats are essential for brain function, hormones, warmth and the protection of your vital internal organs, so don't cut them out completely :)
