Why doesn't the carbon dioxide from your soft drink react the same as hydrogen when exposed to a flame?

Because their chemical compositions are different. Hydrogen burns so well that is used as rocket fuel. Carbon dioxide does not burn at all so it is used in fire extinguisher. The basic reason of this difference is the different free energies of both substances, as you can find in any chemical thermodynamics book.
