It's a show of class and breeding.

Knowing how to set the table is a courtesy one engages in to facilitate the meal being eaten. ie. bring a spoon if a course is soup. However, I imagine you might be wondering if there is a good reason for placing our utensils and glasses in a set order and folding napkins ect.
We do this because it is a polite gesture and makes guests feel welcome at the table. It shows that you value their company and have taken steps to ensure their comfort and convenience. Hygienically, it stops people from reaching and touching things across the table with hands that have been in and around their mouths and keeps you from mistakenly drinking from your neighbours glass.
Eating separate courses with separate and different sized utensils allows you to taste and enjoy the food the way the person cooking it for you intended without left overs from other courses changing the flavours.
Another good reason is, though you might not follow the use of these settings in your home on a daily basis, ( I certainly don't ) there will come a meal in your life - or several meals - at which you will be glad to understand how and why the table is arranged and you won't feel so strange that you can't enjoy what would likely be a very good meal.
