There are more than 2,000 Apple varieties and new varieties are becoming available each year, so not only would a true average have to be calculated for a large number of varieties, one would have to decide if the average was only to consider variety, or whether it would also consider the number of Apples of each variety.
We can, however, get some idea of average mass by looking at a study from a 1995 Virginia Tech study (see link below). Listed below are average diameter in inches and average weight in pounds for those Apples in the published study that gave both diameter and weight values. In some cases a range of values was given rather than a single number and in such cases, an average of that range is listed.
