What is the difference between a builder and a joiner?

A builder takes on all the responsibilities of building, such as Plumbing, heating, masonry, drywall, electrical, roofing, insulation, and trim, either doing the work with a crew or subcontracting. A carpenter deals mainly with wood fabrication and joining methods in framing and trim.
