1- usually v8 has worst mileage, except in some SUVs

2- V8's typically have more Horse Power - so better acceleration

3- Some V8's have better torque, although many V6's can be tuned for better torque at low range - which is what one needs to get out of snow, mud,going up hills, etc.

4- Compare the V6 and V8's based on their mileage (usually V6's have better mileage - but not always).

In many cases a full size SUV is underpowered with a V6 which makes the engine have to work hard and can make mileage worse. So a V8 when driven exactly the same can get better mileage and has surplus power if you choose to use it. Check the est. MPG when comparing you may be surprised.
