A triple beam balance is generally used to measure a previously unknown mass of an object. In cooking, a better alternative would be a measuring cup.

Even so, to use a triple beam balance, you need to put what you need on top of the scale. Then, adjust the three sliders, starting with the 100-gram slider on the top & working your way down until the indicator on the right side of the scale (or left side, depending on what model you're using) is perfectly parallel to the ground or counter and perpendicular to the non-moving indicator.
