How do you change your facebook date of birth?

There is a link that states "Edit profile" on your Profile page. The newer profile pages have it mixed in with where your occupation and basic info is under your name.

If you are having a hard time finding it, hit CTRL+F and type in Edit, and it should show up.

Your Birthday settings are maybe about halfway down.
