Rice when removed from chaff/outer covering is brown.After polishing i.e.removing thin layer on bran it looks white.This thin layer/bran contains nutrients like Vitamin B,Iron,calcium etc.White rice is acidic in nature and has high glycemic index.Brown rice has low glycemic index and hence can be taken by diabetic patient.White rice is acidic in nature and lacks fibre.Brown rice needs to be soaked for few hours before cooking.It tastes far better than white rice.You can get brown rice at health stores or at some nature cure centres.
