Below the neck: Foreshank, and brisket The first part of the back: (top)rib, (bottom)plate Middle back: (top)short loin, (bottom)Flank Twards the butt: (top)sirlion, (bottom)tip Then there is the butt: that includes the rump, rounds, tip, and hindshank.
