Snails, or "les escargots", is a food that is appreciated in France. The country is the largest snail consumer in the world with around 40,000 tons consumed per year. Most of the snail aquirement is artisanal, that is, gathered from the wild. Famous French snails include "escargot de Bourgogne" ("Snail of Burgundy") and

"petit gris" ("Small Grey").

Contrary to what many of us think, snails are not an usual menu item and even many people in France are reluctant to eat them.
