Sometimes people grow up with an idea to become a certain "something" and then when they have completed the educational requirements and actually step foot in the job, it is all wrong for them. For example, a friend wanted to work in early childhood education, but when she began working in this field, she would constantly catch things in the nursery.
Lots of times people change jobs because they are not happy. The unhappiness can be because of the people they work with not liking them, not wanting to take the time to train them or because the person doesn't like the job so they have a "blow it off" attitude.
I think another reason is geographic. People move to find better jobs and when they get to the new job, they have difficulty adjusting to the new culture. For some, it is a rude awakening to discover the world does not adjust to them and that they need to be more adaptive to thrive/survive...even if only for a short while.
Job dissatisfaction mostly involves a conflict of some kind. Meyers-Briggs personality test gives many clues as to how to avoid and understand conflict in yourself and in others. the process is called typewatching.
