Aquitaine is a big region, and food is not the same if you stay in Bordeaux, the Pays Basque or in Dordogne.

In Aquitaine, a big part of food is based on duck and goose: confit de canard or d'oie (preserved duck or goose leg), magret (duck breast), foie gras, even potatoes are cooked in duck fat : pommes de terre sarladaises (the best are cooked with a kind of mushrooms named cèpe).

You can also find a few river fish.

In Arcachon, the oysters are really good.

In Bordeaux, a special pastrie is le cannelé.
