Meats are kept better in the freezer. Meats can be kept in the refrigerator for 3 to 4 days if raw and 1 to 2 days longer if cooked. Always place cooked meats in an airtight container. Once you have cooked the turkey, it is best to remove the meat from the bones prior to putting it away in the refrigerator. Not only does it take up less space, but the flavor of the meat stays better than when left on the bones.
To make broth or soup, I don't delay. For best flavor, I immediately stew the bones. A crock pot works great for that. I can throw everything in the crock pot at night and its ready to work with in the morning.
