What may cause a sudden unexplained onset of paranoid behavior in a Siamese Cat?

The cat may be suffering from an unseen illness, wound, or may simply have been frightened - animals that are wounded or sick, especially solitary animals, will prefer to be left alone. Cats that are being mistreated or frightened may also start to display neurotic behaviour.
