Could amphetamines show up on a drug test as cocaine?

Yes, unless the person conducting your drug test, does not want to specifically test for that, which would be unlikely at all levels. On a 5 panel drug test, which is the most commonly used, they test for Cocaine, Amphetamines (which could mean amphetamines, methamphetamines, and even ecstasy if it contained either of the two), Opiates, PCP, and of course THC. I have heard of under 5 panel drug tests before, but it is VERY unlikely. I know for a job of any sort where you need a urine analysis, you are commonly put to a 5 panel drug test or more. For probation or Rehabilitation depending on your drugs of choice they put you on a 5 panel drug test or more. So I am 100% sure that whichever drug test you are going to take, will test for amphetamines.
