How do you start a proper conversation?

A lot depends on where you are. I assume this is a person that you don't know. Let's say you are in a grocery store. You could say excuse me, what is the best kind of tuna fish to buy.

You could say, you look like an intelligent person. Let me ask your opinion about something. What do you think about.... and then fill in something that you want an opinion on.
